The ingredients to this great salad are simple. I love the texture of the extra firm water-packed tofu. All you need to do to get it salad-ready, is to drain the water in the package. You do not want that in your salad!
The Dorothy Lynch dressing is a personal favorite. It is an easy off-the-shelf dressing that does not include all those mysterious ingredients found in most prepared dressings on the market.
I eat organic as much as possible. I don't want to feed my family food that is sprayed with harmful chemicals or worse yet, are gmo. Organic is the safest way to go, and in the long run it is the cheapest. I believe it is an investment in the health of my family - way cheaper than those medical bills and pharmaceutical drugs. It's like my own medical insurance that unfortunately isn't a part of our national health care system.
Just take that drained tofu and mash it to bits in a bowl. Add some chick'nish and Dorothy Lynch to give the tofu a good flavor.
Boil the lentils for 15 minutes or so - until they are soft. No need to soak lentils beforehand.
Assemble the salad on the plate - lentils, lettuce, peppers, cucumber, and top with the tofu and more Dorothy Lynch. Time to dig in and indulge in all that healthy goodness! Mmmmm!

Lentil & Tofu Power Salad Printable Recipe
Serves 4
Ingredients:
1 c. lentils, washed
1 pkg. Extra firm tofu
1 T. vegetarian chicken seasoning
2 T. Dorothy Lynch salad dressing
3 c. salad greens
1 cucumber, cubed
1 green pepper, diced
Dorothy Lynch salad dressing
Directions:
- Boil the lentils for 15-20 minutes in enough water to cover. Drain.
- While the lentils are cooking, drain the tofu and mash in a medium sized bowl.
- Add seasoning and 2T. salad dressing to tofu. Stir to combine.
- Assemble salads in the following order: lentils, salad greens, tofu mixture, cucumber & pepper.
- Drizzle the top with additional salad dressing to taste.
- Optional: top with sunflower seeds, chia seeds, walnuts
