Roasted Brussel Sprouts with Lentils


Brussels sprouts.

Yea - I know what you're thinking.

But before you write them off as one of those veggies that you aren't going to touch, let me tell you just a little bit about this ill-loved veggie.

If you are serious about having a healthy diet, this is one vegetable you should not overlook.




One cup of these little babies gives you:

  • over 243% of your daily vitamin K,
  • more than 128% of your vitamin C,
  • and a healthy dose of many more vitamins and minerals.

Brussels sprouts are thought to help protect you from cancer.
And brussels sprouts are also known to lower cholesterol levels.


Yes, this cruciferous veggie is certainly one you want to try to include in your diet every week.

There are lots of ways to cook brussels sprouts.

I chose to roast them, and boy, does that ever give them a nice flavor.

Give this recipe a try.  It is a very simple and easy dish to make.  I thought it was delicious.

Roasted Brussels Sprouts with Lentils

Serves 4

Ingredients:
4 cups quartered fresh brussels sprouts
2 T. canola oil
1/2 t. salt
favorite spaghetti sauce
nutritional yeast flakes
4 cups cooked lentils

Directions: 
Preheat oven to 375 degrees.  
Place quartered brussels sprouts in an oven-proof pan.  Drizzle with canola oil.  Stir to coat.  Sprinkle with salt.
Roast in oven for 35 minutes or  until browned and tender.
Serve on lentils.  Top with warm spaghetti sauce.  Sprinkle with nutritional yeast flakes.
